if a tunnel with the same destination is created on multiple routers (let's say 2 routers), can someone sniffing the netdb easy/instantly tell how many routers is publishing it? or are tunnels/leases 'combined' in netdb lookup responses making it harder?

more than one is about as much as you'll learn, often because the leaseset is explicitly marked as multi-homed.
