Like if a VPN provider had SOCKS endpoints like Mullvad or ProtonVPN do, could you configure i2p.plugins.socksoutproxy to use it and act like a bridge?

BiglyBT has some plugins, "VPN Helper for X" that basically package some smart configuration for "X" VPN, if this is a thing we can do it might not be a bad idea
